Resumo Neste trabalho, foram avaliados os comportamentos mecânico e estrutural de diferentes cortes cárneos em testes de determinação da força de cisalhamento, com o objetivo de identificar possíveis diferenças que podem interferir negativamente na mensuração da maciez objetiva. Seis cortes cárneos: Contrafilé (Longissimus dorsi), Maminha (Tensor fasciae latae), Lagarto (Semitendinosus), Filé-mignon (Psoas major) e Picanha (Biceps femoris) bovinos, e Lombo suíno (Longissimus dorsi) foram analisados de acordo com o método Warner-Bratzler, usando um texturômetro equipado com lâmina de 1 mm de espessura. As superfícies cisalhadas foram analisadas por microscopia eletrônica de varredura e as curvas mecânicas geradas durante os testes foram estudadas. Diferentes comportamentos foram observados nas curvas mecânicas e na microestrutura dos cortes cárneos em estudo. Alguns cortes apresentaram picos máximos bem definidos, enquanto outros apresentaram curvas mais abertas com maior distribuição da força durante os testes. Os cortes também apresentaram diferenças quanto à altura dos picos, que variou entre diferentes cortes e até em um mesmo corte. Nas microestruturas, foram observados diferentes comportamentos como: fibras deformadas por tracionamento, fibras aglomeradas devido a forte compressão e irregularidades na espessura e formato de fibras. Assim, concluiu-se que o teste de determinação da força de cisalhamento utilizado envolve outros princípios, como compressão e elongação, dependendo do corte cárneo estudado.

Summary This research evaluated the mechanical and structural behaviours of different meat cuts in shear force tests with the aim of identifying possible differences that could negatively influence objective tenderness measurements. Five Brazilian beef cuts (Longissimus dorsi, Tensor fasciae latae, Semitendinosus, Psoas major and Biceps femoris) and Pork loin (Longissimus dorsi)) were analyzed according to the Warner-Bratzler method using a texturometer equipped with a 1 mm thick blade. The sheared surfaces were analyzed by scanning electron microscopy and the mechanical curves generated during the tests were studied. Different behaviours were observed in the mechanical curves and in the microstructure of the meat cuts studied. Some muscles showed well defined maximum peaks while others showed wider curves with greater distribution of the force during testing. The muscles also varied with respect to peak heights between different muscles and even within the same muscle. Different behaviours were observed in the microstructure, such as fibers deformed by the tensile strength, agglomerated fibers due to the great compression and irregularities in fiber thickness and shape. Thus, it was concluded that the shear force test used involved other mechanical principles such as compression and elongation, depending on the meat cut studied.

ABSTRACT Because processing and storage conditions affect several beef quality attributes, the food industry uses a variety of synthetic antioxidants. However, some synthetic antioxidants have been questioned regarding its safety, and thus the interest in using natural antioxidants in food products is increasing. This paper aimed at assessing leaf aqueous extracts of Rosemary (Rosmarinus officinalis Linnaeus) and Pitanga (Eugenia uniflora Linnaeus) as antioxidants in beef cold storage. After 48h storage, patties added of Rosemary leaf extracts showed increased pH. Patties added of Pitanga extracts had the lowest a* color values. Oxymyoglobin levels were significantly higher for Negative control, than for Pitanga treatment. The 10% extract addition increased lipid oxidation of beef patties. Correlation coefficients between lipid and myoglobin oxidations were all above 0.85. Pitanga leaf extracts negatively influenced beef color, probably because of its higher chlorophyll content. Lipid oxidation of beef patties was increased with the addition of leaf extracts. The inclusion of 10% leaf extract into beef patties seems not suitable, because it may enhance the amount of prooxidant compounds, as well as the amount of substances capable of reacting with lipid secondary products. Correlations between lipid and myoglobin oxidations demonstrated strong relationship.

O propósito deste trabalho foi comparar parâmetros físico-químicos e sensoriais de hambúrgueres produzidos com carnes bovina ou bubalina, buscando alternativa para ampliar o consumo da carne de búfalos. Foram realizadas análises físico-químicas de composição centesimal (teores de proteína, umidade, gordura e cinzas), valor de pH, cor objetiva (L*, a* e b*), força de cisalhamento, perdas por cocção e redução de diâmetro (encolhimento). A aceitação sensorial foi avaliada por testes de aceitação utilizando-se escala hedônica de nove pontos para os atributos aparência, textura, suculência, sabor e qualidade global. Em relação à composição centesimal, as duas formulações apresentaram teores de umidade próximos a 65%, 1% de cinzas, 17% de proteínas e 13% de lipídeos. Não foram encontradas diferenças (p > 0,05) para os valores de pH (5,49-5,50), força de cisalhamento (0,62-0,86kgf), perdas por cocção (23,04-29,40%) e redução de diâmetro (16,40-20,29%). As análises de cor também não diferiram (p > 0,05) entre as amostras, com valores médios próximos a 8, 4 e 10 para os parâmetros L*, a* e b*, respectivamente. Com relação à análise sensorial observou-se diferença estatística (p < 0,05) apenas no atributo suculência, no qual o hambúrguer bovino (7,63) foi superior ao bubalino (7,17). Para os demais atributos avaliados não foram verificadas diferenças significativas (p > 0,05) na aceitação pelos consumidores, que atribuíram notas na faixa de 7 (gostei moderadamente) a 8 (gostei muito). Pode-se concluir que o hambúrguer de carne bubalina apresenta parâmetros tecnológicos e aceitação sensorial similares ao hambúrguer de carne bovina, podendo portanto representar uma boa alternativa para ampliação do consumo da carne de búfalo.

The purpose of this research was to compare the physicochemical and sensory parameters of hamburgers made with bovine and bubaline meats, aiming to find alternatives to increase the consumption of buffalo meat. The physicochemical analyses included the proximate composition (protein, moisture, fat and ash), pH value, objective colour (L*, a* and b*), shear force, cooking loss and shrinkage. The sensory acceptance was accessed using an acceptance test with a nine-point hedonic scale for the following attributes: appearance, texture, juiciness, flavour and overall quality. Regarding the proximate composition, both formulations presented similar values for moisture, ash, protein and lipids (approximately 65%, 1%, 17% and 13%, respectively). No differences were found for the pH values (5.49-5.50), shear force (0.62-0.86kgf), cooking loss (23.04-29.4%) or shrinkage (16.4-20.29%) (p>0.05). The colour analyses did not differ (p>0.05) between the samples, with mean values of around 8, 4 and 10 for the parameters of L*, a*, and b*, respectively. Concerning the sensory analysis, a statistical difference (p<0.05) was only found for the attribute of juiciness, where the bovine hamburgers (7.63) were superior to the bubaline ones (7.17). For the other attributes, no statistical differences (p>0.05) were found by the consumers, who awarded scores of 7 (like moderately) and 8 (like very much). It was concluded that, in comparison with hamburgers made from beef meat, hamburgers made from buffalo meat showed similar technological parameters and sensory acceptance, representing a good alternative to increase the consumption of this meat.

O monitoramento semanal de um grupo de capivaras (Hydrochaeris hydrochaeris) foi realizado durante 12 meses (fevereiro/2003 a janeiro/2004) ao anoitecer. As observações consistiram na coleta de informações comportamentais, classificação etária e contagem direta de indivíduos avistados durante o pastejo. No período de estudo, foi feita uma captura, com a contenção dos animais, pesagens, sexagens, marcações, bem como a definição das classes etárias dos 15 animais apreendidos. A densidade ecológica média foi de 0,58±0,05ind ha-1 e o número médio de indivíduos foi de 21±5,6. O grupo apresentou uma mudança de comportamento, com o aumento da área de pastejo e a diminuição do número de indivíduos, principalmente jovens, causando uma diminuição da densidade ecológica da população nos meses de junho a setembro de 2003. Machos jovens foram provavelmente expulsos dos grupos não somente em virtude do período reprodutivo, mas também como uma medida de ajuste populacional em função da escassez de alimento. O aumento da área de vivência durante a seca, juntamente à provável expulsão de indivíduos em função da alimentação e/ou reprodução, mostraram a capacidade da espécie em driblar condições pouco favoráveis encontradas durante o ano.

A capybara (Hydrochaeris hydrochaeris) population was monitored weekly at nightfall for 12 months (February 2003 to January 2004). Information about behavior, age class and animal number at pasture activities were collected during the observations. Fifteen animals were captured once and thus, their contention, weighing, identifications, sex definition, as well as, the age class confirmation could be done. The average ecological density was 0,58±0,05ind ha-1 and the mean individual number was 21±5,6. The capybara group changed its behavior by increasing the pasture area and decreasing the number of animals observed (mainly juveniles) from June to September (2003). Juvenile males were probably banished from the group to provide population adjust because of reproduction season and food scarcity. Home-range increase during dry season added to animals' banishment for food and/or reproduction reasons show the capybaras' ability to react against difficult environmental conditions during the year.

A composição química da carne e o rendimento de carcaça de perdizes (Rhynchotus rufescens) adultas, com 12 meses, criadas em cativeiro com rações balanceadas, foram determinadas neste trabalho. Para rendimento de carcaça, após o abate e evisceração, foram feitos dois cortes: peito e coxa+sobrecoxa+dorso. Para análise química, foram retiradas três amostras de cada corte para determinação da composição centesimal da umidade, proteínas totais, lipídeos totais, cinzas e colesterol. Os valores observados mostraram um rendimento médio de carcaça de 74,4% com 36,6% de carne de peito. Os componentes químicos apresentaram para os cortes de coxa-sobrecoxa e peito, respectivamente, umidade 62,4 e 55,9%; proteínas 25,2 e 29,1%; lipídeos 1,6 e 5,6%; cinzas 1,4 e 1,2% e colesterol 234 e 70mg/100g. O excelente rendimento de carcaça, somado à composição química de sua carne, mostra o potencial desta espécie para a produção de carnes especiais.

The composition of the meat and the carcass income of 12 months adult partridges (Rhynchotus rufescens), raised in captivity with balanced rations were established in this work. For carcass income, two cuts were made: thigh+ over-thigh + back and chest. For the chemical analysis three samples of each cut were removed to determinate the centesimal composition of the moisture, total proteins, total lipids, ashes and cholesterol. The observed values showed a medium income of carcass of 74.4% with 36.6% of chest meat. The chemical components presented for the cuts of thigh + over-thigh + back and chest respectively, were: moisture 62.4 and 55.9%; proteins 25.2 and 29.1%; lipids 1.6 and 5.6%; ashes 1.4 and 1.2%, and cholesterol 234 and 70mg/100g. The excellent carcass income added to the chemical composition of this meat show the potential of this species for the production of special meats.
